A while ago, I was hiking with some friends of mine in Mizugakiyama 瑞牆山 in Yamanashi prefecture 山梨県. It's a rather easy hike and can be done in about 3 hours. Good weather provided, this can be a really rewarding experience.
Mizukagiyama is basiacally a rock formation, rather than a mountain in the classical sense. Therefore, the view from these rocks are usually superb, leading into a valley of very interesting landscape.
The Minami Alps 南アルプス can be seen in the background.
And Mt. Fuji as well, if it's not too cloudy. Here he is barely visible in the background.
