In case you feel as lost as me when ordering Yakitori 焼き鳥 or Katsu かつ in Japan, the picture below might be helpful. I always thought that Momoniku もも肉 was from some other part of the chicken. Also, I never knew that loosu katsu ロースかつ is from a pig's back.
